I would have to say that my favorite part of farming is ready access to any food that is growing on the farm. It is really excellent to sit down at a meal with my family and friends that is 50-90% local, farm to table in one day. I would encourage anyone to look more seriously in your area for a local source of food. These include: farmers markets, community supported agriculture programs, calling farms in your area for direct farm pick-up, gardening with your neighbors.
I’ve begun making up dishes with whatever I bring home. Here is my favorite so far:
Eggplant Pasta
make pasta, seam whole cloves of garlic with sliced onions,
meanwhile, broil the eggplant until it is black and crusty, rotating it to blacken each side. Skin will peel off. Place pulp into strainer and salt with sea salt. Drain and mix vigorously with fork until smooth consistency.
Cut 5-10 ripe tomatoes into small bite-sized chunks, mix with large amounts of fresh basil.
Drain pasta and add to it steamed garlic, onions, tomatoes, basil, eggplant, and salt and pepper to taste. Drizzle with olive oil and serve.
I just wanted to let you know that I’m regularly reading the posts on this site and they have really been helpful when making food choices. It’s also been helpful just to know of someone who’s really practicing it.
Also, I’ve been a huge Wendell Berry fan for quite some time and so you’re living my dream working on an organic farm. I’m jealous, which is not increasing my wellness.
